Breakfast is served!
With most American river rafting companies, breakfasts on a rafting trip of two days or more are very common. It can be added on to a one day trip on either the South Fork or Middle Fork of the American River. Before heading out for a vigorous day on the river you will want to fuel up with a hardy breakfast. A typical breakfast includes an egg scramble (both meat and a veggie options are always available), diced potatoes, pancakes or French toast, sausages and/or bacon, fruit, platters, orange juice, coffee, tea, and hot cocoa for the kids. There is always plenty for everyone!
YUM
One of our favorite breakfast items at our American river camp is our poached eggs and kale, a great veggie option that everyone really loves. We sauté white onions and garlic in olive oil in a large fry pan that is also oven compatible. We then add the kale and cook it for 2 min. on the stove top. We then crack the eggs right on top of the kale, put the entire pan in the oven and bake for 5 min or until eggs are poached. Add some fresh salsa and you have an awesome meal that is sure to satisfy your morning hunger and help you last until lunch.
Meals for each trip
Typically, a breakfast on a rafting trip like the Middle Fork American River trip is not quite as heavy due to the shuttle ride over to the put-in which has some winding roads that has been known to make a few people nauseous. We serve a lighter breakfast consisting of bagels and muffins, a fruit platter, scrambled eggs and bacon for those needing a little protein in the morning, Chef Judy’s famous homemade cinnamon rolls, along with the usual coffee, tea, cocoa, and juice.
